Crunch Salad with Miso Dressing

Any crunchy vegetable will do

Ingredients

  • 2 large carrots, diced
  • 2 bulbs Kohlrabi, peeled and diced
  • 1 cup Mung Bean Sprouts
  • 1/4 red onion, diced
  • 1/2 cup jicima, peeled and diced
  • 2 tablespoons canola oil
  • 1/4 cup water
  • 1/4 cup mellow white Miso
  • 1 1/2 tablespoons Brown Rice Vinegar
  • 2 tablespoons maple syrup
  • 2 tablespoons chopped cilantro

Directions

Place all the vegetables in a large bowl. Combine remaining ingredients in a blender and blend until smooth. Pour over vegetables and mix well. Chill.
