Fresh Tomato Sauce

Ingredients

  • 3 tablespoons fresh oregano, chopped
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon coriander seeds, crushed
  • 1/4 teaspoon salt
  • 1/8 teaspoon crushed red pepper
  • 3 cloves garlic, minced
  • 4 cups diced, seeded tomatoes
  • 3 scallions, chopped

Directions

Combine all ingredients in a bowl. Allow the flavors to meld for at least 15 minutes.
