Dried Plum-Pecan Bread

So moist and without all the fat

Ingredients

  • No stick cooking spray
  • 1 1/3 cups pitted dried plums
  • 3/4 cup prune juice
  • 1/3 cup water
  • 2 teaspoons grated orange peel
  • 1 cup toasted wheat germ
  • 3/4 cup whole wheat flour
  • 1/2 cup unbleached allpurpose flour
  • 2/3 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large egg whites
  • 1/2 cup chopped pecans

Directions

Heat oven to 350 degrees. Lightly coat 8 1/2 x 4 1/2 inch loaf pan with cooking spray set aside. In small saucepan, bring dried plums, prune juice and water to a boil. Transfer dried plum mixture to food processor or blender process until smooth. Stir in orange peel and set aside. In large bowl, combine wheat germ, flours, brown sugar, baking powder, baking soda and salt stir to blend thoroughly. Mix in dried plum mixture, egg whites and pecans until thoroughly blended. Spread batter in pan bake in center of oven about 50 minutes or until wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Turn onto rack to cool completely.
