Grilled Snapper with Light and Hot Sauce

Make the sauce the day before to allow flavors to blend then dinner is a breeze

Ingredients

  • 1 large ripe Plum Tomato, diced
  • 1/4 cup finely diced shallots or red onion
  • 1 teaspoon minced red chili pepper
  • 1/2 cup lime juice
  • 1/4 cup rice vinegar
  • salt and pepper to taste
  • 2 tablespoons chopped cilantro
  • 2 green onions, chopped
  • 1 pound red snapper fillet
  • 1 tablespoon extra virgin olive oil
  • 4 tablespoons fresh Thyme
  • lemon quarters for garnish

Directions

Make salsa by combining the first 8 ingredients plum tomatoes through green onions. Refrigerate overnight or allow to set for at least 30 minutes.Preheat broiler or grill. Rinse the fish and pat dry. Brush the whole fillet with olive oil and sprinkle with salt and pepper and Thyme. Grill or broil 46 minutes per side until cooked through. Serve with sauce .
