Curried Shrimp and Rice Salad

A delicious lunch using leftover brown rice

Ingredients

  • 1 cup cooked shrimp, cut in half
  • 2 cups cooked brown rice
  • 1/2 cup cooked peas
  • 1/2 cup minced red onion
  • 1/4 cup chopped parsley
  • 1/4 cup lowfat mayonaise
  • 1/2 cup nonfat plain yogurt
  • 1/2 lemon, juiced
  • 2 teaspoons Curry powder
  • 1/8 teaspoon cinnamon

Directions

Combine the shrimp, rice, peas and onion in a serving bowl. In a smaller bowl, whisk the mayonnaise, yogurt, lemon juice, Curry powder, and cinnamon together until smooth. Combine the dressing with the rice mixture. Chill.
