Chicken Scampi

Be sure not to marinate more than 30 minutes otherwise the lemon juice will toughen the chicken

Ingredients

  • 1 1/4 pound boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • 2 tablespoons parmesan cheese
  • 2 tablespoons parsley, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • 2 tablespoons Worchestershire sauce
  • 1/4 cup white wine, optional
  • 1/4 cup fresh lemon juice

Directions

Cut chicken into 1 strips. Mix marinade ingredients in a ziplock baggie and shake to mix. Add chicken to baggie and marinate for 30 minutes. Broil 10 14 minutes or until all the pink is gone, turning once halfway through.
