Steam the beans until tender, about 1012 minutes. Set aside. Meanwhile, roast the walnuts on a cookie sheet in a 350 degree oven for 10 minutes. Cool.Heat oil in a skillet over medium heat, add the onions and saut for 3 minutes. Add the salt, reduce heat, and cook, covered, until soft. Grind the walnuts in a food processor. Add the beans and onions and process until thoroughly blended. Add the lemon juice and the pepper and nutmeg and process until blended. Adjust seasonings to taste.
