Spinach Salad with Maple Mustard Dressing

Ingredients

  • 1 pound fresh spinach, washed, stemmed, dried
  • 1 cup thinly shredded red cabbage
  • 1 cup sliced button mushrooms
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup canola oil
  • 1/4 cup apple juice
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons Dijonstyle mustard
  • pinch of salt
  • black pepper to taste

Directions

Place salad ingredients in a serving bowl. In a small jar, combine all of the dressing ingredients and shake well. Pour over salad and toss. Serve immediately.
