Spicy Lime Grilled Seitan Kabobs

This is a wonderful marinade for tofu or tempeh kabobs as well

Ingredients

  • 1 16ouncejar Seitan wheatmeat
  • 15 whole button mushrooms
  • 1 green bell pepper, cut into chunks
  • 1 sweet onion, quartered, separated
  • 2 zucchini, cut into 1/2
  • 2 yellow summer squash, cut into 1/2 chunks
  • 3/4 cup lime juice
  • 2 tablespoons Barley Malt
  • 34 cloves garlic, minced
  • 1 tablespoon minced onion
  • 2 tablespoons finely chopped Cilantro chinese parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup extra virgin olive oil

Directions

Mix marinade and pour over seitan and vegetables. Marinade at least 2 hours, preferably longer. Skewer ingredients and broil or grill until veggies are done to your likeness.
