Curried Sweet Potato Soup

Red garnet sweet potatoes are best if you can find them In fact any orange vegetable works well here butternut squash or carrots for example

Ingredients

  • 1/2 Spanish onion, chopped
  • 1 teaspoon Curry
  • 4 large sweet potatoes, peeled and cubed
  • 1 teaspoon salt, or to taste
  • 1 teaspoon olive oil
  • 1/2 teaspoon Cumin
  • 45 cups water or Vegetable Stock
  • 1/2 teaspoon ginger powder

Directions

In a large soup pot, saute onion with spices until onion is soft, about 5 minutes. Place sweet potatoes or squash in soup pot with the water and salt. Boil gently until vegetables are soft. Puree in blender in batches. Garnish with chopped parsley, scallions or garlic croutons.
